Chicken Stroganoff
Serves 2
Per serve:
- Grams of carbohydrate - 7.5
- Grams of protein - 75
Ingredients:
- 1 tablespoon butter
- 100g mushrooms, sliced
- 100g onion, sliced
- 1 clove garlic
- 500g chicken breast, skin removed, cut into strips
- 1/4 cup water
- 1 chicken stock cube
- 1/2 cup sour cream
- 1/4 teaspoon mustard powder
- Salt & pepper to taste
Method:
- Heat butter in a large frying pan, add mushrooms, onions and garlic. Brown on low heat until onion is caramelised. Remove from pan and set aside.
- In the same pan add the chicken strips, browning lightly.
- Add water, stock cube, sour cream and mustard powder to the pan and continue cooking over low heat until chicken is done and sauce has reduced and thickened.
- Add mushroom mixture. Stir well and heat through.
