Pumpkin & Asparagus Frittata
Serves 2
Per serve:
- Grams of carbohydrate - 10
- Grams of protein - 30
Ingredients:
- 1 tablespoon olive oil
- 50g bacon, chopped
- 100g onion, thinly sliced
- 150g diced pumpkin, baked
- 150g asparagus, steamed
- 6 free range eggs
- 1/4 cup cream
- 100g tasty cheese, grated
Method:
- Heat oil in a frying pan, add bacon and onion and cook for 2-3 minutes.
- Arrange cooked pumpkin and asparagus on top of bacon and onion mixture.
- Whisk remaining ingredients together in a bowl until combined. Season with salt and pepper.
- Pour egg mixture over vegetables and cook for 5-7 minutes on a medium heat or until set.
- Place frittata under a preheated grill for 2 minutes or until golden brown.
- Serve hot or cold with a salad.
